Raisins pancake recipe

Ingredients
-250g self raising flour
-2 eggs
-1 cup fresh whole milk
-1/4 cup seedless raisins
-1/4 cup sugar (optional if the sweetness of the raisins is enough for you)
-1/4 tsp bi-carbonate soda (optional, but it helped make my pancakes extra fluffy)
-1/4 cup vegetable oil
Directions
-Soak the raisins in warm water for 10 min to soften them
-Sift the flour into a bowl
-Add the sugar and bicarbonate then mix
-Make a well in the middle of the flour and add the eggs and milk
-Using an electric mixer or hand whisk, mix the ingredients to a smooth batter
-Drain the raisins and spread over the batter then mix lightly using a spoon until evenly distributed
-Over moderate heat, heat up a non-stick pan
-spread ¼ tsp vegetable oil on the pan once it becomes hot enough
-Using a moderately sized soup spoon, take one scoop of the batter and gently pour in the centre of the pan
-Let cook until air bubbles appear on the top side of the pancake and the bottom side to turn nicely brown
-Using a fish stick, turn over t the other side and cook until nicely brown
-Remove from pan and place on a flat plate
-Repeat process with the rest of the batter

-Serve when hot and enjoy
