How to make spicy bread and butter pudding

Prep Time: 20 minutes
Cooking Time: 1 hour
Serves: 8
Ingredients
-100g butter
-16 slices white bread (be sure to remove the crusts)
-100g assorted mixed dried fruit
-50g sugar
-1.5 pint milk
-4 medium-sized lightly beaten eggs
-3/4 tsp mixed spice
-1 tsp caster sugar to sprinkle on top
Instructions
-Generously spread butter on each slice of bread and cut into four equal squares
-In a 1.5 liter oven proof dish, place a layer of bread over the base ensuring you overlap the slices
-Sprinkle with the mixed fruit
-Make another layer of bread and sprinkle with the assorted fruits alternating in this manner until all ingredients have been used
-Over low heat, dissolve the sugar in the milk. Once dissolved, remove from heat and gently place on a surface
-Gradually add the egg and mixed spices then whisk thoroughly
-Pour this mixture over the bread and fruit arrangement and let soak for 10 minutes
-Sprinkle nutmeg on top and bake at 180 degrees for 1 hour
-Sprinkle caster sugar on top and serve immediately
