How to make marmalade sponge pudding

Prep Time: 15 minutes
Cooking Time: 1 ½ hours
Ingredients
-50g softened butter
-50g brown sugar
-1/2 orange grated rind
-1 lightly beaten egg
-90g self raising flour
-1 tbsp orange marmalade
Instructions
-Sift the flour into a bowl
-Grease a 1 liter pudding basin
-In a bowl beat the butter and sugar to a creamy batter
-Beat in the orange rind
-Gradually, beat in the egg
-Using a spatula, fold in the flour
-Spoon the marmalade onto the bottom of the pudding basin
-Spoon the flour mixture on top of the marmalade
-Cover with a grease proof paper folding a pleat to give allowance for rising then tie
-In a sauce pan half full of water, steam for 1 ½ hours
-Turn onto a plate and serve immediately with warm custard
