Avocado with Asian dressing salad recipe

Ingredients
-2 ripe and firm avocadoes
-1/2 cup mint leaves
-1/2 cup coriander leaves
-2 cucumbers
Dressing
-1 tbsp mirin
-1 ½ tbsp Japanese rice vinegar
-2 tbsp soy sauce
-1 tsp caster sugar
-1 tbsp extra light olive oil
Method
-Cut the avocadoes into halves, remove stones and roughly chop into a bowl
-Cut the cucumbers into halve length-wise, de-seed then cut width-wise into thin slices and toss into the bowl of avocadoes
-Add the mint and coriander into the bowl
-Make the dressing by whisking together the mirin, rice vinegar, soy sauce, sugar, and oil in a bowl until well combined (set aside for approximately 10 minutes for the flavors to develop).
-Drizzle the dressing over the salad and toss gently to combine

Best served as an accompaniment of fish, chicken, or pork.
