-2 cups of all purpose flour
-1 ¼ cup of fresh milk
-1/2 cup sugar
-2 fresh eggs
-1 ¼ tsp baking powder
-1/4 tsp cinnamon
METHOD
-Sift the flour into a bowl
-Add the dry ingredients and mix thoroughly with a spatula
-Make a well in the middle of the flour and pour the eggs and milk
-Whisk the ingredients to a smooth consistent batter
-Coat a skillet with cooking spray and cook 4 pancakes at a time
-Use medium-sized serving spoon to scoop the batter and then pour onto the skillet
-Let the pancakes cook until air bubbles appear on the top surface while the bottom surface browns
-Turn over the pancake and let the other side cook
-Remove from pan and place on a plate
-Repeat until all the batter is complete
