Ingredients
-450g minced beef
-3 spring onions finely chopped
-2 small carrots peeled and diced
-5 cloves of crashed garlic
-2 tbsp garam masala
-salt to taste
-450g sifted self raising flour
-8 tbsp of oil
-oil for deep frying
-2 eggs

Preparing the filling
-Gently heat 2 tbsp of cooking oil in a cooking pot
-Add the onions and the minced beef and stir well until brown
-Add the carrots and spices then mix well and leave to simmer for about 10 minutes while frequently turning to avoid burning
-Once ready and golden brown, turn off the heat
Preparing the dough
-Mix the sifted flour and salt in a bowl
-Mix in the 8 tbsp oil, eggs, and water to make dough
-Knead gently on a lightly floured surface till smooth
-Divide dough into 20 equal portions and roll out each portion into a square
-Place some of the minced filling in the middle of each square
-Dampen the edges of each square with water
-Fold one top corner over the opposite corner and seal the edges to form a triangular pastry
-Heat the deep frying oil and dip a few samosas at a time
-Fry until golden brown then remove and drain in absorbent paper
-Keep away on a tray while you cook the remaining pieces
-Serve alongside lemon wedges and enjoy!
