How to make prune and apricot pudding

Prep Time: 10 minutes
Cooking Time:  1 hour
Serves: 2
Ingredients
-50g dried prunes
-50g dried apricots
-2 tbsp water
-25g chopped walnuts
Ingredients for the sponge
-50g softened butter
-50g brown sugar
-1 lightly beaten egg
-50g self raising whole meal flour
Instructions
-Arrange the prunes and apricots on the base of a 0.5 liter oven proof dish
-Sprinkle over the water and walnuts
-Beat the margarine and sugar to a creamy batter
-Gradually beat in the egg then fold in the flour using a spatula
-Spoon the batter over the fruit arrangement over the base of the dish
-Bake in oven at 180 degrees for 1 hour
-Remove and serve when hot with custard
