How to make baked ginger pudding

Prep Time: 20 minutes
Cooking Time: 1 ½ hours
Ingredients
-100g soft margarine
-100g brown sugar
-2 lightly beaten eggs
-175g sifted self raising flour
-2 tsp ground ginger
Ingredients for the lemon sauce
-juice of two lemons and their grated rind
-25g corn flour
-50g sugar
-1/2 pint water
-25g butter
Instructions
-Grease a deep square cake tin
-Beat the margarine and sugar into a creamy batter and gradually beat in the eggs
-Fold in the flour and ginger
-Pour this mixture into the cake tin and bake at 180 degrees for 40-45 minutes
-Turn out the tin onto a flat serving plate
Instructions for the lemon sauce
-In a pan, mix the lemon juice, rind, corn flour, and sugar. Gradually add the water and bring to a boil as you stir continuously
-Stir in the butter and once mixed remove from heat and gently place aside

-Cut the pudding into square pieces and serve hot with the sauce
