Ingredients
-550g long grain rice
-2 pints of water
-salt and pepper
-900g cooked chicken
-4 tbsp of Mayonnaise
-300ml sour cream
-1 ½ tbsp curry powder
-2 tbsp oil
Instructions
-Put the water in a sauce pan; add the salt then the rice
-Bring the rice to boil then reduce the heat and cover
-Simmer until the rice is properly cooked and no water is left
-Remove from heat and use a folk to fluff the rice up then leave it to cool
-Neatly arrange the rice on a round base serving dish
-Dice up the chicken and place inside a bowl
-In a pan, heat the cooking oil and then cook the curry powder in it for approximately 3 minutes
-Remove from heat and allow cooling before adding all the other ingredients and stir lightly with a folk
-Season with salt and pepper to taste
-Drizzle over the chicken and toss
-Spoon over the rice and garnish using fresh coriander
Can be accompanied with a green salad, Enjoy!
